I just wandered if there will ever be a singleplayer mode in Onset

You can already play in singleplayer, you just have to set up your own local server,

Onset is a sandbox like gmod you will have to create a localhost or local server to where only you can connect to in your property if you want and play and do such to whatever you desire on it.
Otherwise there is multiplayer server's available where you should be able to play without being disturbed if that's what your after.
Just rememeber you can set a password on your own local server when you've made it so even nobody can join it if you make it online.
